Seafood
It's hard to imagine the exotic range of seafoods other than fish available at the market. One of the most highly prized is ther mud crab. These huge crabs are brought live to the market tied in a string made of tree bark. This holds the powerful claws at bay. There is a lot of meat in those claws and also in the body of the crab and mud crabs are a favourite amongst the local population. This means they sell out fast and you need to be early to get them !
Sometimes you'll find cooked crayfish here in varying sizes. For some strange reason these are not that popular with the locals which never seems to amaze the visitors to the region who snap them up when ever they become available. You need to know when the cray was caught and when it was cooked though as this kind of seafood can spoil quickly. I've also found slipper lobster at the market on rare occasions. This photo has a small Painted Crayfish and what looks like 2 slipper lobsters (All cooked) in the back ground along with a few smoked reef fish..
Another favourite at most markets is sea shells on small bush skewers. These small shells are collected in the shallows. The shells are boiled to remove the meat and then poached in a coconut cream with sometimes banana and other vegetables.
